San Biagio is obtained from pure Glera grapes, coming from the vineyards of Valdobbiadene and made with the "sur lie" method, which expresses the essence of the wine heritage and the traditional wine of the area: the Prosecco so-called "sui lieviti" or "col fondo" is in fact the oldest sparkling wine produced in Valdobbiadene.
A wine that is fresh, fruity, acidic and slightly angular in the first months, after refermentation on its own yeasts sees more evolved notes appearing gradually becoming softer and more complex.
